I'm out of flex points for the rest of this week.
Actually, I have about 3 left, but I'm going to ignore them.
Went to the grocery store yesterday with the intention of getting lots of stuff to make dishes I can portion out and freeze because if I have to eat Smart Ones or Lean Cuisines for lunch much longer, I will barf. I left the store without buying any frozen meals.
Anyway, I thought I'd be spending more than $100, but I got out of there spending about $65 for lots of stuff and the ingredients for Hot Girl Got Fat's Enchilada Lover's Casserole. My plans to make it yesterday were thwarted when I got invited to the movies. I had candy at the movies. Used the remainder of my points for the day plus a few flex points for it.
Anyway, this week I will be making Enchilada Lover's Casserole (which, by the way, really IS only 5 points a serving), my favorite Rice and Broccoli Casserole using low-fat/fat free ingredients, and my favorite low point Taco Soup that is EXCELLENT for freezing in portions to grab and take to lunch every now and then. :)
I'm going to try out a Mexican Meatloaf recipe I found, but I'll probably wait until next week for that.
For lunch today I cut up a cucumber and added Fat Free Zesty Italian for some flavor, had a serving of the Rice and Broccoli Casserole (SO YUMMY, but not as low point as I'd hoped...it was 4.5 points for a serving...one dish makes 8 servings), and then I made one of thoes pre-cooked pot roast servings (4 points), and it was the best meal I've made for myself in a long time.
Now, off to the movies again! NO candy this time. ;) I'm taking a 100 cal pack to snack on instead.

The enchillada lovers cassarole sounds sooooo yummy! I think I will have to make it soon.
